This recipe is so simple that I wasn’t even sure whether to post it or not. But who says that a real recipe has to be complicated with a lot of ingredients, right? When I see salad recipes, most of the time they come with all kind of flavored vinaigrette. Don’t get me wrong, I really like them! I’m all for different kind of flavors than the ones I’m used to from back home. But sometimes, when you have really great tasting produce, you don’t need much seasonings. Tomatoes are a great example. If you have tasty ones available, I mean those that when you cut them, the entire kitchen will magically smell like them! These don’t require more than some good extra virgin olive oil, salt and basil and/or oregano. Its simplicity is stunning! It makes you wonder how something so basic can taste so so good.
I have probably said this before, but I just love it when I can taste every simple ingredient of what I’m eating! And I hope you do enjoy this tasty tomato salad, too!

Monica, Welcome to my blog! Have you considered simply adding mozzarella to this tomato salad, caprese style? :) I am already looking forward to seeing you here again soon! Ciao :)
