During the flight from Houston to Frankfurt I was browsing through the tv channels of the inflight entertainment, when I ran into <\/span>The Little Paris Kitchen’<\/em><\/a>. This BBC series really caught my attention! The British Rachel Khoo presents yummy and easy to make recipes prepared in her one of a kind little Parisian apartment. As soon as I got back home I looked her episodes up and couldn’t resist trying out one of her recipes myself. <\/span>Cheese, pistachio and prune cake.<\/a>\u00a0<\/em>I replaced the prunes with chopped roasted bacon and the result was so\u00a0tasty and easy to make! Rachel Khoo suggests to try out different ingredients to be added to the main batter. I wanted to give it a second try. So I decided to add to this recipe my own personal note. The outcome was a mix of tomatoes, mozzarella, black olives and basil! <\/span><\/p>\n

Btw, the similarity of the ingredients to the Italian flag is pure coincidence ;-)<\/span><\/p>\n

Ingredients:<\/strong><\/p>\n

250g \/ 9oz plain flour<\/p>\n

1 tbsp baking powder<\/p>\n

150g \/ 5\u00bdoz mozzarella<\/p>\n

80g \/ 2\u00beoz black olives<\/p>\n

3 medium sized tomatoes<\/p>\n

a handful of fresh basil<\/p>\n

4 free-range eggs<\/p>\n

120ml \/ 4fl oz olive oil<\/p>\n

100ml \/ 3\u00bdfl oz milk<\/p>\n

50g \/ 1\u00beoz plain yoghurt<\/p>\n

1 tsp salt<\/p>\n

a pinch of freshly-ground black pepper<\/p>\n

* \u00a0* \u00a0* \u00a0* \u00a0*<\/p>\n

Preheat the oven to 180C\/350F and line the bread tin (22x11cm \/ 8\u00bdx4\u00bcin)\u00a0with baking paper.\u00a0In a bowl, mix together the flour, baking powder, chopped tomatoes and mozzarella, pitted olives cut in half and basil. In a\u00a0separate bowl, whisk the eggs until fluffy. Then add bit by bit the oil, milk and yoghurt. Season with the salt and black pepper. Add\u00a0the flour mixture into the whisked eggs. Try not to overbeat as this will make the end result tough (it\u2019s better to undermix).\u00a0Pour the batter into the prepared tin.\u00a0Bake for 30-40 minutes or until a knife or toothpick inserted in the centre of the cake comes out clean.\u00a0Leave to cool in the tin.<\/p>\n
