I am finally back in the kitchen after having dedicated myself to remodeling projects at home. As much as I like the way it turned out, I still prefer spending time in the kitchen, and behind my camera.
After all the hard work the best reward was this “Italian” French toast. I’ve been looking for different ways – other than tiramisu purposes – to use mascarpone cheese. And the outcome was this combination of flavors, including one of my favorite fruits: strawberries! Topped with fresh mint leaves, it gives the French toast an immediate summer touch! Granted, mascarpone contains quite an impressive amount of fat, but this should not make you hesitate at all. I mean, no wonder it’s so tasty.. As we say in Italy, “you can’t have a full barrel and a drunk wife” :) But in case it’s ‘too much’ you can always mix it with some light cream cheese, or replace it completely.
At this point all you need is this creamy, fruity French Toast, your favorite book and lots of time to enjoy all of it either on the couch, in the garden or on your balcony. Let all your senses be part of it!
