I do know that this is not my first mozzarella, basil pesto, tomato recipe that I post (where is the blushing smiley??). I guess I just can’t help it. It’s impossible to hide my love for those ingredients! So, here it is, another recipe! And I promise, you will love it.
Honestly, it wouldn’t have crossed my mind to add the crispy bacon. Not because I don’t like it. Actually it’s quite the opposite. When I told my husband about my Italian sandwich, as expected, he suggested to add bacon. Of course. I am starting to believe that he is allergic to vegetarian food ;) Bacon is King in the US, isn’t it? ;) But this time it didn’t take him much to convince me. I thought, why not giving my recipe a little twist and turn it into an Italo-American one?
The only thing that I was missing was the yummy taste of the buffalo mozzarella, as I couldn’t find any at the store. I replaced it by regular mozzarella, which works fine too.
Ingredients:
2 medium sized focaccia breads (can be replaced by regular sandwich bread)
2 medium sized tomatoes
1 (buffalo) mozzarella
1 tbsp of basil pesto
bacon as needed
2tsp of liquid butter or herb butter
oregano to taste

Roast the bacon until crispy. In the meantime slice the mozzarella and marinate it in a small bowl with the pesto. Cut the tomatoes into slices and season with oregano.
Cut the focaccia bread into half and make layers of bacon, pesto marinated mozzarella and tomatoes. Coat the top of the sandwich with some butter and place on the hot grill until brown and crispy. Yum!
